Mango & ginger

I have several … the central ingredient being mangoes – the best to use are those in the part-green part-ripe stage. Cube them and add the following: sweet red pepper diced small (adds a lovely colour), very finely diced red onion or shallots, combination of fresh green herbs: mint, cilantro, basil, dill …, the version in the photograph also had some hand torn baby spinach and a small amount of chopped celery for added crunch. Soy sauce or fish sauce could serve as the salt source though plain salt is fine too. Either stir the same with sesame oil or cayenne or other chilly powder and finely chopped ginger, or use the oil to mount the salad tadka style with the ginger and finely chopped fresh green chillies (in which case omit the red chilly powder). Pour over salad, add chopped roasted peanuts or cashews, toss or stir lightly and … enjoy.
