I’m not vegetarian by any means (far from it much to the chagrin of many) but love the infinite variety of vegetables. Indians especially really know their way around different veges (and some of their parts) that many folk in other parts may have never heard of. And then, there is reciprocity — artichokes jump to mind as a vege that probably never made its way into an Indian kitchen, and neither, I venture to speculate , have cacti. But I was surprised and delighted to learn that some of the gourmet veges such as morels and fiddle-head greens are known and used in certain regions of India — Kashmir and Himachal Pradesh respectively! This section will continue to expand no doubt as the numbers of individual veges to which I dedicate chapters will grow and glow.
